UMEBOSHI PLUMS

Spiral Foods Umeboshi are plums pickled in brine along with shiso leaves, giving them a brilliant red colour and a flavour that’s both fruity and strongly salty. The Japanese usually eat them with rice, and they take their umeboshi very seriously – as does Spiral. These handmade umeboshi are grown organically and allowed to ripen for an extra month to fully mature their flavour. Once picked, they’re immediately put in a brine customised for each batch by highly experienced farmers. The initial pickling is followed by three days of sun-drying, then additional pickling to optimise the flavour.

UMEBOSHI PUREE

Spiral Foods Umeboshi are plums pickled in brine along with shiso leaves, giving them a brilliant red colour and a taste that’s both fruity and strongly salty – something like a more intensely flavourful tomato. First made in ancient China and now best known from Japanese cuisine, they are sometimes de-seeded and mashed into a puree.

This form is easier to take as a dietary supplement to maintain alkalinity and address nausea and digestive difficulties, and easier to use as a seasoning in sauces, salad dressings and the like. Try it with rice and corn dishes, too.
